Ingredients
- 5 medium potatoes
- 4 eggs
- 1/4 small onion
- 1/4 cup sweet gherkins or sweet relish
- 1/4 cup mayo
- 1 Tablespoon sugar (optional)
- 1/2 Teaspoon yellow mustard
- salt
- Pepper
- Paprika
Instructions
- Place potatoes and eggs in 5 quart pan and cover with cold water.
- Heat on medium until potatoes are tender when poked with a fork (approximately 30 minutes)
- Remove from heat and drain potatoes and eggs and rinse with cold water to cool.
- Peel potatoes and eggs and cut into small cubes. Place in a large bowl.
- Finely chop onion and sweet gherkins (or sweet relish) and add to bowl.
- Add Mayo and mix. Note: mixture should be creamy but not runny. Add a small amount of the pickle juice and sugar to the potato mixture. Skip if using sweet relish.
- Add yellow mustard and mix.
- Add salt and pepper to taste.
- Sprinkle Paprika to garnish.
