Ingredients
- (2) 9 inch pie shells
- 2 Cups cooked sweet potatoes
- 8 Tablespoons butter
- 1 ¾ Cups sugar
- 1 Teaspoon ground nutmeg
- 1 ½ Teaspoon vanilla extract
- 2 eggs
- 1 Cup (8 oz) evaporated milk
Instructions
- Preheat oven to 350 degrees F. Place sweet potatoes in a 5 quart sauce pan and cover potatoes with water. Boil over medium heat until the sweet potatoes are soft when poked with a fork (approximately 30 minutes).
- Drain potatoes and remove skin and beat until smooth with an electric mixer.
- Cream butter and sugar together and add to sweet potato mixture and beat well. Add nutmeg, vanilla, eggs and evaporated milk.
- Mix until ingredients are thoroughly mixed and pour into unbaked pie shells and bake until the pies are set in the center (approximately 35 – 40 minutes).
